Abstract

Kitutu: history and recipes from Africa in the formation of Brazilian kitchens is a recent work by anthropologist Raul Lody, an author who is a reference in the field of food anthropology, especially that dedicated to African heritage in Brazilian cuisine. The book presents a historical study on ingredients, on preparation methods and meanings attributed to certain foods, showing references from Africa to Brazil from the African diaspora. The review presents the main questions of the book and makes some critical comments to the work.
