Resumen

Brasil tiene un valioso reservorio de palmeras tropicales, especies de gran importancia económica. A pesar del amplio uso, las especies son poco conocidas, lo que requiere más investigación, principalmente en aceites vegetales que contienen componentes especiales. El trabajo tuvo como objetivo caracterizar los aceites fijos extraídos del mesocarpio de los frutos tucumã-açú y tucumã. Los aceites fijos se obtuvieron de Amazon Oil Industry LTDA, Ananindeua/PA, bajo extracción por prensado en frío. Los aceites mostraron alto potencial en términos de componentes bioactivos, con énfasis en el contenido de clorofila total del aceite de tucumã (50,99 mg/100 g) y polifenoles extraíbles totales del aceite de tucumã (147,02 mg/100 g). En cuanto al perfil de ácidos grasos, el aceite de tucumã-açú mostró un alto contenido de ácidos grasos insaturados, principalmente oleico y linoleico, con más del 73%. Como fuente de compuestos bioactivos, existen perspectivas para el uso de aceites de tucumã como materia prima para industrias químicas y alimentarias.
